Ingredients:
| 1/4 cup + 1 T olive oil | |||
| 1/2 cup minced garlic | |||
| 1 box linguine | |||
| 1 1/2 skinless, boneless chicken (cut into chunks) | |||
| 3 Anaheim raw chilies (deseeded and chopped) | |||
| 3 plum tomatoes (diced) | |||
| 1/2 cup thinly chopped fresh basil | |||
| 4 oz proscuitto ham (chopped) | |||
| 2 T butter | |||
| 1 cup fresh parmensan cheese | |||
| salt and pepper | |||
| Directions: | |||
| Heat 1/2 cup olive oil over medium heat | |||
| Add garlic and saute until brown | |||
| Strain garlic from olive oil and retun oil to pan. | |||
| Add enough olive oil to make 1/4 cup | |||
| Add chicken and cook 5 minutes | |||
| Add chilies and cook 2 minutes | |||
| Add tomatoes, basil, ham, reserved garlic, and saute for 1 min | |||
| Remove from heat and add butter, stir until melted | |||
| Add linguine and 1/2 cup parm cheese and toss until mixed well | |||
| Add salt and pepper to taste | |||
| Sprinkle with remaining cheese | |||
