Yet another snowy day

Its snowing... again. Don't worry folks its May 1st. I am done with school in 15 days and then it's summer, but it certainly does not feel like summer right now. I thought I would share one of my favorite pasta dishes today, Marge's Holiday Pasta. 

Ingredients:
1/4 cup + 1 T olive oil
1/2 cup minced garlic
1 box linguine
1 1/2 skinless, boneless chicken (cut into chunks)
3 Anaheim raw chilies (deseeded and chopped)
3 plum tomatoes (diced)
1/2 cup thinly chopped fresh basil
4 oz proscuitto ham (chopped)
2 T butter
1 cup fresh parmensan cheese
salt and pepper
Directions:
Heat 1/2 cup olive oil over medium heat
Add garlic and saute until brown
Strain garlic from olive oil and retun oil to pan.
Add enough olive oil to make 1/4 cup
Add chicken and cook 5 minutes
Add chilies and cook 2 minutes
Add tomatoes, basil, ham, reserved garlic, and saute for 1 min
Remove from heat and add butter, stir until melted
Add linguine and 1/2 cup parm cheese and toss until mixed well
Add salt and pepper to taste
Sprinkle with remaining cheese
