Ingredients:
1/4 cup + 1 T olive oil | |||
1/2 cup minced garlic | |||
1 box linguine | |||
1 1/2 skinless, boneless chicken (cut into chunks) | |||
3 Anaheim raw chilies (deseeded and chopped) | |||
3 plum tomatoes (diced) | |||
1/2 cup thinly chopped fresh basil | |||
4 oz proscuitto ham (chopped) | |||
2 T butter | |||
1 cup fresh parmensan cheese | |||
salt and pepper | |||
Directions: | |||
Heat 1/2 cup olive oil over medium heat | |||
Add garlic and saute until brown | |||
Strain garlic from olive oil and retun oil to pan. | |||
Add enough olive oil to make 1/4 cup | |||
Add chicken and cook 5 minutes | |||
Add chilies and cook 2 minutes | |||
Add tomatoes, basil, ham, reserved garlic, and saute for 1 min | |||
Remove from heat and add butter, stir until melted | |||
Add linguine and 1/2 cup parm cheese and toss until mixed well | |||
Add salt and pepper to taste | |||
Sprinkle with remaining cheese | |||
